Had dinner at Spruce last night, in the cool summer air of Park City, overlooking the Canyons Resort. An ideal evening of food, conversation and scenery.
To start the meal, Raspberry Bramble cocktail. It went down way too easily.
Refreshing citrusy, raspberryish, and chilled down with crushed ice.
So for your next little summer soiree, try this delightful little cocktail.

RASPBERRY BRAMBLE (makes one drink)
2 tablespoons fresh raspberries, reserve one for garnish
juice of 1 lemon (with pulp)
2 ounces vodka of choice (a citrus vodka would be wonderful)
1/2 cup club soda
crushed ice
lemon slices for garnish
In a cocktail glass press the raspberries with the back of a spoon. Add the lemon juice, vodka, club soda and enough crushed ice to fill the glass. Garnish with lemon slices and reserved raspberry. Drink!
